A Family Tradition

Ivan's Baked Potatoes is more than just a food stand, it's a family-driven tradition built on passion, perseverance, and the pursuit of potato perfection.

Founded in 1998 by Laura and Juan Cosio, the business originally went by "Charlie's Corn," named in honor of their oldest son, Carlos. As the menu evolved to focus on massive baked potatoes, the family renamed the business after their youngest son, Ivan.

What started as a side hustle quickly became a community favorite. Juan, once a field worker, and Laura, then employed at Lucky's, dreamed of building something meaningful for their family. With a roaster oven that baked 200 potatoes at a time, they began selling at the Watsonville Farmers Market. The early years brought challenges, but through hard work and consistency, they built a loyal customer base.

What Makes Us Unique: Premium Idaho potatoes sourced directly from the "Potato State." A custom roaster that bakes up to 500 potatoes per hour at 500°F. Toppings made fresh daily, from hand-chopped bacon and seasoned carne asada to classic butter, sour cream, cheese, green onions, and jalapeños. Deep roots in the community, serving San Benito, Santa Cruz, and Monterey counties at farmers markets and local events.

Today, now able to produce hundreds of potatoes daily, Ivan's continues to show up at local events, festivals, and markets — always with the same care and attention to quality that started it all.
